Ube Brownies
Fudgy, chewy and bursting with vibrant colour, these Ube Brownies are a delicious twist on a classic favourite. Made with sweet, nutty ube and studded with creamy white chocolate chips, they're an eye-catching treat that's perfect for sharing at celebrations, afternoon tea or whenever a sweet craving strikes.

Ingredients

  • 140g butter 180g white chocolate, chopped
  • 2 eggs
  • 180g CSR Caster Sugar
  • 50g CSR Brown Sugar
  • 150g White Wings Plain Flour
  • 40g ube powder
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1/2 cup white chocolate chips

Method

  1. Preheat oven to 180°C. Lightly grease a 23 cm square cake tin and line with
    baking paper, leaving enough overhang on the sides to lift the brownies out
    once cooled.
     
  2. Place the butter and white chocolate in a heatproof bowl over a saucepan of
    gently simmering water, making sure the base of the bowl doesn’t touch the
    water. Stir occasionally until melted and smooth. Remove from the heat and
    allow to cool slightly.
     
  3. In a large mixing bowl, whisk the egg, caster sugar and brown sugar until
    well combined. Slowly pour the melted butter and white chocolate mixture
    into the egg mixture, whisking continuously until smooth and combined.
     
  4. In a separate bowl, combine the plain flour, ube powder, salt and baking
    powder. Add to the wet mixture and gently fold through with a spatula until
    just combined. Add white chocolate chips, folding again.
     
  5. Spread the batter into the prepared tin and use a spatula to spread it evenly
    and smooth the top. Top with extra white chocolate chips, if desired.
     
  6. Bake for 20-25 minutes, or until the edges are set and a skewer inserted into
    the centre comes out with a few moist crumbs attached. Take care not to
    over bake, as the brownies will continue to set as they cool.
     
  7. Allow to cool completely in the tin. Use the baking paper to lift the brownie
    out, then cut into squares and serve.
