Chocolate Custard Puddings

Move over chocolate mousse, these Chocolate Custard Puddings are the new dessert favourite.

These individual puddings make a great dessert for dinner parties. Make them in advance so they’re ready to go and just crumble some biscuits on top to finish.

Ingredients

  • 1 cup milk
  • 300ml pouring cream
  • ½ tsp vanilla extract
  • 100g dark chocolate, finely chopped
  • 4 egg yolks
  • ½ cup CSR Brown Sugar
  • 2 tbs cornflour
  • Shortbread or ginger biscuits, for serving

Method

  1. Place milk, cream and vanilla in a saucepan. Heat without boiling. Remove from heat and stir in the chocolate until melted.
  2. In a bowl whisk together the yolks, sugar and cornflour until smooth. Gradually add half of the milk mixture whisking whilst adding to ensure it is smooth. Return to saucepan with remaining milk mixture and heat until just boiling and thickened.
  3. Spoon between serving glasses and refrigerate at least an hour until chilled. When serving, sprinkle with crumbled biscuits.
