Ingredients

  • ¾ cup monk fruit raw sugar

  • 2 cups rolled oats

  • ¼ cup raisins

  • ¼ cup pepitas

  • ¼ cup extra virgin olive oil  

Method

  1. Preheat the oven to 160°C. Brush a small slice tin with extra virgin olive oil and line the bottom with baking paper.

  2. In a small saucepan combine the monk sugar mix with ¼ cup water and heat, stirring frequently until the sugar dissolves and a syrup forms. 

  3. Turn off the heat and add the rolled oats, raisins, pepitas and oil. Mix to combine and coat the ingredients well with the syrup. Tip into the lined tin, spread and press into the tin. Score the top into slices. 

  4. Bake for 20-30 minutes or until golden brown. Cool in the tin and then turn out onto a board and cut into slices. Store in an airtight container.
