Anzac Biscuits

    1 cup rolled oats

    1 cup plain flour

    ¾ cup desiccated coconut

    ¾ cup CSR Caster Sugar

    125g butter, chopped

    2 tbsp CSR Golden Syrup

    2 tbsp water

    1 tsp bi-carbonate of soda

    1. Pre-heat oven to 160°C (140°C fan-forced). Line 2 oven trays with baking paper.

    2. Combine oats, flour, coconut and sugar in a large mixing bowl.

    3. Place butter, golden syrup and water in a small saucepan. Cook until simmering and butter has melted. Remove from heat and immediately
    stir in bi-carb soda, mixture will become frothy and rise. Pour into the dry ingredients and mix well.

    4. Roll spoonfuls of mixture and place onto baking trays pressing down slightly. Allow room for spreading. Bake for 16 minutes until turning golden. Allow to sit for several minutes on the tray before removing to a cooling rack to cool completely.



    This recipe makes a thinner, chewier biscuit.
    For thicker, crunchier Anzac biscuits, add 1 tablespoon water instead of 2. Mixture will be drier and you will need to press into rounds with your hands
    Using coarsely shredded coconut  is great for texture
