Arabian Nights Baked Apples

Ingredients

6 large Cooking Apples
1 cup Water
1/4 cup CSR Caster Sugar
Thinly sliced peel from one Orange
1/4 cup chopped Dried Figs
1/2 cup chopped Stoned Dates
1/4 teaspoon Cloves
1/2 teaspoon Cinnamon
1 tablespoon Rum
Apricot Jam
CSR Brown Sugar
Butter

Method

1 : Core apples and peel the top quarter of each apple. Place apples peeled stem side up in a baking dish.
2 : Mix together water and CSR Caster Sugar and add with orange peel to baking dish, pouring around apples.
3 : Mix together in bowl figs, dates, cloves, cinnamon and rum. Stuff some of mixture into centre of each apple, so that it
is evenly distributed between the six. Top each apple with a teaspoonful of apricot jam.
4 : Cover the baking dish and cook apples in oven preheated to 180oC for about 35 mins.
5 : Remove foil, sprinkle top of apples fairly heavily with CSR Brown Sugar. Add a small knob of butter to the centre
of each.
6 : Raise oven temperature to 190oC and cook for another 10 mins, testing for tenderness with a skewer inserted into
apples. Serve with sauce from dish spooned over.
