Federation Gateaux

Ingredients

4 tbsp CSR Original Golden Syrup
4 tbsp Cornflour
Zest and Juice of 1 Orange
Zest and Juice of 1/2 Lemon
2 Egg Yolks
1 Ready Made Sponge Cake
1/2 Cup Thickened Cream, whipped
1/2 Punnet of Strawberries, hulled and sliced
1/2 Punnet of Strawberries, for decoration
1 Orange, peeled and segmented

Method

1 : In a saucepan combine CSR Original Golden Syrup, cornflour, orange and lemon juice and zest -
whisk until smooth.
2 : Over moderate heat bring to boil, reduce heat and simmer for 2 mins, whisking continuously.
Remove from heat and stir in egg yolks. Allow to cool slightly.
3 : Cut the sponge layer horizontally in two. Spread the bottom layer with orange filling and a little of the
cream, sprinkle over the sliced strawberries and cover with the top layer of sponge cake.
4 : Cover top with remaining cream and decorate with whole strawberries and orange segments.
