Banana Bread

Makes: 10 slices
3 ripe bananas, mashed
1 egg, lightly beaten
115g (½ cup) CSR Raw Caster Sugar
1/3 cup buttermilk or milk
1 tablespoon butter, melted
225g (1½ cups) self-raising flour
37g (¼ cup) plain four
½ teaspoon baking powder
½ teaspoon ground cinnamon
¼ teaspoon ground ginger

Topping
1 tablespoon rolled oats
1 tablespoon CSR Raw Caster Sugar, extra
  1. Preheat oven to 180ºC conventional or 160ºC fan forced. Grease and line a 11cm x 25cm loaf pan with baking paper.
  2. In a large bowl combine banana, egg, CSR Raw Caster Sugar, buttermilk, butter and beat until well combined.
  3. Sift flours, baking powder and spices in a separate bowl. Add the banana mixture to the dry ingredients and mix until just combined. Pour into loaf pan.
  4. Top with oats and extra sugar, bake for 55 minutes or until cooked when tested with a skewer. Serve warm, cut into thick slices or toasted until golden.
