Golden Banana Oat Muffins
On the table: 35 minutes
2 1/2 cups self-raising flour
1/2 tsp bicarbonate of soda
1/2 cup quick cooking oats
1/2 cup CSR Brown Sugar
1/2 cup CSR Golden Syrup Squeeze
2 eggs, lightly beaten
2 small overripe bananas mashed
1/3 cup vegetable oil
3/4 cup buttermilk
1/3 cup CSR Golden Syrup Squeeze, extra
1/3 cup pistachio nuts, for garnish
- Preheat oven to 180ºC conventional or 160ºC fan forced. Sift flour and bicarbonate of soda into a bowl, stir in the oats and brown sugar. Combine golden syrup, eggs, banana, oil and buttermilk and stir into the dry ingredients until just combined. Do not overmix.
- Spoon the muffin mixture into greased and base lined (1/3 cup/80ml) muffin pans. Bake for 15-20 mins or until cooked and golden.
- Enjoy warm, drizzled with extra golden syrup and sprinkled with pistachio nuts.
