Cherry Tart

Ingredients

250g Shortcrust Pastry
Cherry and Strawberry Jam
500g Cherries, stoned
125g Ground Almonds
125g CSR Caster Sugar
2 Eggs, beaten

Method

1 : Roll out pastry to line 20cm tart tin. Bake blind until just firm.
2 : Allow to cool slightly and then spread enough Cherry and Strawberry jam over base to give a thin cover. Arrange
cherries on top of jam.
3 : Mix ground almonds and CSR Caster Sugar with beaten eggs. Spread over the cherries and bake tart in oven
preheated to 190oC for about 30 mins, or until top is pale, golden and set.

Tip :This dish is delicious served cold with thick cream!
