Captain Cook's Crunch

Ingredients

4 Bananas
Juice and Grated Zest of 2 Oranges
4 Tablespoons CSR Caster Sugar
2 Tablespoons Dried Apricots, chopped
1 Teaspoon Nutmeg
1 Teaspoon Cinnamon
1 Tablespoon Flaked Almonds
2 Cups Toasted Muesli
2 Tablespoons Shredded Coconut
60g Polyunsaturated Margarine (melted)

Method

1 : Preheat oven to 200oC.
2 : Slice up the bananas into 1.5cm pieces and place in the bottom of four individual ovenproof serving dishes.
3 : Combine orange juice and zest, CSR Caster Sugar, dried apricots, nutmeg and cinnamon. Pour mixture over the
bananas.
4 : Mix together the flaked almonds, muesli, margarine and coconut and spoon over the bananas, covering well and
creating a crunchy top.
5 : Cook in the oven for 6 minutes until the topping is golden brown.

Tip :This dish is delicious served with yoghurt!
