Banana Coconut Cream Pie
Ingredients
100g Plain Biscuits
60g Butter, melted
1/2 Cup Shredded Coconut
2 Bananas
3/4 Cup Vanilla Custard (from supermarket)
1/3 Cup Shredded Coconut, extra
3 Tablespoons CSR Golden Demerara Sugar
Method
1: Place biscuits in a food processor and blend until crumbled. With the motor running, pour in the melted butter. Add
shredded coconut and pulse to blend.
2 : Press mixture firmly onto the base of a 20cm pie plate. Avoid bringing mixture up the sides.
3 : Slice bananas and place over pie crust. Pour the custard over the bananas and sprinkle with the extra shredded
coconut. Finally, sprinkle CSR Golden Demerara Sugar over the top.
4 : Place under a very hot grill for 5 minutes until sugar caramelises. Allow to cool slightly before serving.
