Apple Trifle
Ingredients
6 Slices Stale Sponge Cake
2 Tablespoons Calvados or Brandy
2 Tablespoons chopped nuts
300ml prepared Vanilla Custard
2 Egg Whites
2 Tablespoons Cornflour
1 cup prepared apple puree
2 Tablespoons CSR Caster Sugar
2 Tablespoons chopped nuts for decoration
Method
1 : Place sponge cake in serving dish. Sprinkle Calvados and chopped nuts over the top.
2 : Mix vanilla custard and cornflour thoroughly in small saucepan. Heat gently over moderate heat until mixture thickens.
Continue cooking for a few more minutes.
3 : Whisk egg whites until stiff. Gradually add CSR Caster Sugar.
4 : Gently stir egg - white mixture into apple puree. Spoon apple mixture over cake base.
5 : Pour custard over the top and decorate with chopped nuts.
