Apple Snow

Ingredients

750g Cooking Apples
125g CSR White Sugar
Juice of 1 Lemon
3 Egg Whites, beaten until stiff

Method

1 : Chop the apples roughly, leaving skin on and stew in a little water until tender.
2 : Force through a sieve.
3 : Return to a clean pan; add the CSR White Sugar and lemon juice and whisk over low heat until thick.
4 : Remove from heat; whisk until cool and fold in the egg whites.
5 : Place in individual serving dishes. Chill and serve very cold.
