Spicy Carrot Cake or loaf (veg oil free)
Ingredients
Makes two loaves
3 cups plain flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cardamon
1 teaspoon vanilla esscence
1/8 cup orange juice
1 cup apple sauce
1 cup CSR White Sugar
1 cup CSR Soft Brown Sugar
150g butter
4 eggs
3 cups grated carrots
1 cup sultanas
1 cup walnuts
1 cup sunflower seeds
Method
Preheat oven at 175 degrees.
Sift flour, baking powder, baking soda & salt together in a bowl & set aside.
In a separate bowl, cream together butter & sugars until light and fluffy then add vanilla essence, mix well.
In a separate bowl, beat eggs with cinnamon, nutmeg & cardamon for 5 mins, then add orange juice & apple sauce, mix well.
Mix spices mixture with creamed butter mixture together. Fold in flour mixture to wet ingredients. Add carrots, sultanas, walnuts & sunflower seeds, fold mixture until mixed well.
Bake for 1 hour or until skewer comes out clean. Will make into two loaves from an average sized loaf tin.
