Microwave Spicy Apple Cake

Ingredients

1 cup CSR raw sugar
2 eggs
1/2 cup oil
1 tsp vanilla essence
2 apples cored & grated, or finely chopped
2 cups flour
1 tsp baking powder
1 tsp baking soda
2 tsp mixed spice

Frosting:
50g butter
grated rind and juice of 1 lemon
1 cup CSR icing sugar

Method

Beat together the raw sugar and eggs in a food processor or large bowl. Add the oil and vanilla essence. Add grated apple, flour, baking powder, baking soda and mixed spice. Spoon into a non-stick sprayed and paper-lined 5 cup (1 litre) microwave-proof ring mould. Cook on 70% (medium-high) power for 8 to 10 minutes. Cool on a wire rack and serve with lemon frosting or a dusting of icing sugar.

To make the frosting, melt the butter and add the lemon juice, grated rind and icing sugar. Mix until smooth, adding a little extra icing sugar until you have a creamy spreading consistency. Spread over cake when cool.

CSR Raw Sugar Raw Sugar

Ingredients: cane sugar

This natural granulated sugar (golden in colour, and honey like in taste) is mainly used as a sweetener for coffee, or in baking and cooking where it improves the flavour and colour of the end result. It is especially used in recipes for biscuits and cakes made with less processed ingredients like oatmeal and wholemeal flours.
