Fabulous, quick and easy choc chip muffins

Ingredients

2 1/2cups self raising flour
1/4 cup CSR White Sugar
2 teaspoons baking powder
2 eggs
1 1/2cups milk
160g butter
2 Tablespoons cocoa powder
200g choc drops (or 250g choc chips)

Method

Grease a twelve hole muffin tin with butter. Heat the oven to 190°C(375 degrees F)
Sift together the flour, sugar, baking powder and cocoa into a bowl and make a well in the centre.
Melt the butter and combine it with the eggs and milk and add it to the mixture.
Add the choc bits and stir the wole mixture together until all ingredients are moistened.

Spoon the mixture into the tins and fan bake in the oven for 25 minutes.

Comments

Tip: do not mix the muffin mixture too much or the muffins will end up with a pointed top which I call Santa hats!
