Easy Coconut Cake

Ingredients

125g Butter or Margarine
1 1/4 Cups Self Raising Flour
1 Cup CSR White Sugar
1/2 Cup Coconut, grated
1/2 Cup Milk
1 Teaspoon Almond Essence
2 Eggs
Pinch of Salt

Method

1 : Melt the shortening (butter or margarine).
2 : Mix all the other ingredients in basin and pour over the melted shortening.
3 : Beat really hard for 3 mins with a hand beater or for the same time with an electric beater.
4 : Bake in a moderate oven 375oF (190oC) for 35 to 40 mins.

Tip :Be careful not to overcook this cake!
