Parkin
Ingredients
375g Medium Oatmeal
185g Flour
1 Tablespoon CSR White Sugar
1/2 Teaspoon Ground Ginger
1/4 Teaspoon Salt
125g Butter or Margarine
500g CSR Treacle
75ml Milk
1/2 Teaspoon Bicarbonate Soda
Flaked or Shredded Almonds (optional)
Method
1 : Mix the dry ingredients together thoroughly.
2 : Warm the CSR Treacle and butter together but do not allow to get too hot.
3 : Warm the milk to blood heat, add the soda, and mix into the dry ingredients with the treacle mixture.
4 : Grease a tin such as a roasting tin or large square cake tin, sprinkle it with flour and line the bottom with paper.
Pour in the mixture and bake in a moderate oven 375oF (190oC) for approx 40 mins or until firm to the touch.
Flaked or shredded almonds can be scattered over the top surface after the first 15 mins in the oven.
Cut into squares as required.
