Dixie Pecan Squares
Ingredients
125 gms butter - roughly chopped
3/4 cup CSR Brown Sugar
60 gms Plaistowe Cooking Chocolate - roughly chopped
2 eggs
2 tblsps smooth peanut butter
1/2 cup chopped pecan nuts
2/3 cup self raising flour - sifted
1 tblsp CSR Soft Icing Mixture - for dusting
Method
1 : Place butter, CSR Brown Sugar and Plaistowe Cooking Chocolate in a saucepan and stir over a gentle heat until
melted. Allow to cool.
2 : Place eggs, peanut butter and cold butter mixture in a large bowl and beat on medium speed for 5 minutes.
3 : Fold in chopped pecans and sifted flour.
4 : Spread mixture into a greased and paper lined 20 cm square cake pan and bake at 180oC for 30 minutes Allow to
stand in pan for 5 minutes before turning out onto a wire rack to cool. Dust top with CSR Soft Icing Mixture, cut into
25 squares and store in an airtight container.
