Crunchy Peach and Apricot Slice
Ingredients
1/2 Cup CSR Raw Sugar
1 1/2 Cups Wholemeal Self Raising Flour
2/3 Cup Rolled Oats
100g Polyunsaturated Margarine
1/2 Cup Chopped Walnuts
1/2 Cup Dried Apricots
1 1/2 Cups Dried Peaches, chopped
1 Tablespoon CSR Brown Sugar
2 Tablespoons Water
2 Tablespoons Brandy
Method
1 : Preheat oven to 190o C.
2 : Combine CSR Raw Sugar, flour, rolled oats and margarine in a large bowl. Rub mixture with fingertips until it
resembles breadcrumbs. Stir in walnuts.
3 : Press half of the mixture into the base of a 18cm x 28cm lamington tin.
4 : Combine dried apricots, peaches, CSR Brown Sugar, water and brandy in a microwave safe bowl, cook on high for
2-3 minutes stirring once.
5 : Spread the peach and apricot mixture over the oat mixture in the tin.
6 : Sprinkle the remaining crumb mixture over and bake for 23 minutes or until golden brown.
