Coconut Fudge Bars - microwave method
Ingredients
1 cup standard flour
1/2 cup CSR White Sugar
1 tablespoon cocoa
1 cup coconut
125g melted butter
1/2 teaspoon vanilla essence
Icing
1 cup CSR Icing Sugar
2 tablespoons cocoa
30g butter
2 tablespoons hot water
Method
Sift dry ingredients into a bowl. Add melted butter and vanilla. Mix well. Press into a 25 x 15 cm microwave proof slice tin. Cook on high power for 3 1/2 minutes. Cool in tin.
Icing
Melt butter and water on high for 1 minute. Add to sifted dry ingredients. Mix until smooth and glossy. Pour over slice. (Can sprinkle with coconut if desired). Cut when icing is set.
Comments
This is so quick and easy to make and everybody loves it. It is great to have on hand when you get unexpected visitors or for lunch box fillers for the kids (or big kids). It is also easy for the kids to make and there is no danger of getting burnt.
