Clancy's Almond Thins
Ingredients
1/2 Cup CSR White Sugar
60g Polyunsaturated Margarine
2 Egg Whites
1/2 Cup Plain Flour, sifted
2 Tablespoons Flaked Almonds
Extra 4 Tablespoons Flaked Almonds
Method
1 : Preheat oven to 220oC.
2 : Cream margarine and CSR White Sugar until light and fluffy.
3 : Add egg whites and beat with fork until just combined. Add flour and almonds and stir until combined.
4 : Place twelve teaspoons of the mixture onto two greased oven trays, allowing room for spreading. Flatten the
mound of mixture with back of spoon. Sprinkle a few extra almonds on top.
5 : Bake in hot oven 4 minutes or until edges are golden brown. Cool on wire racks.
6 : Repeat with the other half of the mixture.
