Carrot-Oatmeal Cookies
Ingredients
1 Cup Plain Flour
1/4 Cup non-fat Dry Milk Powder
1/4 Teaspoon Baking Powder
1/2 Teaspoon Salt
1/4 Teaspoon Ground Nutmeg
1/3 Cup Shortening
1/4 Teaspoon Ground Cinnamon
1/3 Cup CSR Brown Sugar
1/2 Cup CSR Treacle
1 Egg
1 Cup Shredded Carrots
1 Teaspoon Vanilla
1/2 Cup Raisins (optional)
1 3/4 Cups Quick Cooking Rolled Oats
Method
1 : Combine flour, dry milk, baking powder, baking soda, salt, nutmeg and cinnamon.
2 : Cream together shortening, CSR Brown Sugar and CSR Treacle, add egg then dry ingredients. Stir until well
blended.
3 : Add carrots, vanilla, raisins and oats. Mix well.
4 : Drop teaspoonsful onto an ungreased cookie sheet. Bake in a preheated 190oC oven for 10-12 mins, until lightly
brown. Remove cookies and cool on wire racks.
