Raspberry & Vanilla Cordials

Ingredients

1½ cups water
1 cup (220g) CSR Raw Caster Sugar
½ vanilla bean
3cm long strip of lemon rind
1 cup frozen raspberries

Method

  1. Place water and raw caster sugar in a small saucepan. Stir over low heat until sugar dissolves.
  2. Add scraped seeds from vanilla bean and lemon rind and bring to the boil. Simmer for 5 mins.
  3. Place raspberries in a heatproof bowl. Pour over hot syrup and allow to cool. Strain raspberries from syrup. Pour into sterilised bottles. Store in refrigerator. Enjoy with ice, a sprig of mint and sparkling mineral water.
Makes: 400ml

These refreshing cordials can make a great gift for Christmas. Handwrite your bottle labels and customise using Japanese paper, like we have, or you could use leftover gift wrapping paper. Place them in wine bags and give away individually as a thoughtful Kris Kringle gift.
