Apricot Almond delight

Ingredients

Base:
180g Butter
100g CSR Soft Brown Sugar
3/4 cup sweetened condensed milk
2 packets crushed biscuits
70g chopped apricots
70g chopped almonds
1/2 a lemon of zest
1/4 teaspoon almond essence
Icing:
50g Butter,
300g CSR Icing Sugar
boiling water
zest of 1/2 a lemon
1/4 teaspoon almond essence

Method

Grease a square flat tin and line with baking paper.
Base:
Place butter, brown sugar and condensed milk in a saucepan, stir until melted. Add crushed biscuits, almonds, apricots, zest and essence. Mix well. Press into tin and chill for 20 mins.

Icing:
Combine melted butter, icing sugar and boiling water to make a spreadable mixture. Add zest and essence. Spread over chilled slice and refrigerate.

Comments

This slice is very sweet so have it in moderation. Great for when unexpected visitors drop by.
