Classic Cream Pie
Ingredients
3 Tablespoons Cornflour
2 Cup Milk
1/2 Cup CSR White Sugar
2 Egg Yolks
2 Tablespoons Butter
1 Teaspoon Vanilla
1 Teaspoon Lemon Juice
1 Cup Shredded Coconut
1 Ready Made Pastry Flan
Method
1 : Preheat oven to 180oC.
2 : Blend the cornflour with a little cold milk until smooth.
3 : In a saucepan, heat the remaining milk until just boiling, add the cornflour mixture and CSR White Sugar and stir
until mixture thickens.
4 : Remove from the heat and stir in egg yolks until well combined.
5 : Add the butter, vanilla, lemon juice and coconut and mix well.
6 : Pour filling into baked pastry shell and cook in a moderate oven for 10-15 minutes or until set.
Comments
For decoration sprinkle with extra toasted shredded coconut.
