Apple Pudding

Ingredients

750g Cooking Apples, peeled, cored and sliced
60g Butter
3 Eggs separated
1 Teaspoon Vanilla
125g CSR White Sugar
90g Stale Cake Crumbs

Method

1 : Stew apple slices gently in butter until tender but not brown.
2 : Beat the egg yolks, vanilla and CSR White Sugar until light and pale.
3 : Stir in the cake crumbs and apple.
4 : Whisk the egg whites until stiff and fold them into the mixture.
5 : Pour into pudding tin and cover with greased paper and foil and tie securely. Steam for 1 hour.
Turn out
