Toffee Apples
Ingredients
2 Cups CSR White Sugar
1 1/4 Cups Water
2 Tablespoons Vinegar
8-10 Red Apples
Wooden Sticks
Method
1 : In a heavy saucepan, combine the CSR White Sugar, water and vinegar and stir together over moderate heat. Continue stirring until all the sugar is dissolved, then insert the candy thermometer and boil rapidly until it reaches the hard crack stage (149-154oC). Watch that it doesn't burn.
2 : Meanwhile wash and polish the apples and push the sticks through the cores.
3 : Lightly oil a baking sheet. Remove the toffee from the heat and sit the saucepan in a basin of hot water to prevent setting. Dip the apples quickly into the toffee, twirling around for a few seconds, then stand on the baking sheet to set.
Comments
For presentation wrap the apples in clear cellophane or aluminium foil and tie with a ribbon.
