Banana Nut Cake
Ingredients
CAKE:
1/2 Cup Butter
1 1/2 Cups CSR White Sugar
1 Cup Mashed Ripe Banana
2 Eggs, beaten
4 Tablespoons Sour Cream
1 Teaspoon Each of Baking Powder and Baking Soda
1 3/4 Cup Flour, sifted
1 Cup Chopped Nuts, Pecans, Walnuts or Macadamias
ICING:
1 1/2 Cups CSR Soft Icing Mixture
3 Tablespoons Softened Butter
Grated Rind of 1/2 Orange
Orange Juice
Method
CAKE:
- Cream the butter and CSR White Sugar and add the rest of the ingredients. Mix well.
- Put in a deep springform pan and bake in a medium oven (180oC) for about 50 mins.
- When cool cover with orange icing.
ICING:
- Mix the butter into the sifted CSR Soft Icing Mixture with the rind and add a little juice at a time until it is soft enough to spread.
