Apple and Coconut Cake
Ingredients
125g Butter
2/3 Cup CSR Caster Sugar
2 Eggs
1/2 Cup Self-Raising Flour
1/2 Cup Plain Flour
1/3 Cup Coconut Milk
1 Apple, grated
1 Cup shredded Coconut
Method
- Grease 20cm round cake pan and line with greaseproof paper.
- Cream butter and CSR Caster Sugar until light and fluffy and add eggs one at a time.
- Stir in half the sifted flours with coconut milk. Stir in remaining flour and most of the grated apple.
- Spread into pan and top with the remaining grated apple and shredded coconut. Bake in a moderate oven for 45 minutes. Stand for a few minutes before turning onto wire rack.
