Apple Cake

Ingredients

DOUGH:
2 Cups Plain Flour
1 Cup Butter
2 Tablespoons CSR White Sugar
Juice and Rind of 1 Small Lemon
2 Eggs Yolks
1 Egg White

FILLING:
4 Large Granny Smith Apples, thinly sliced
1/4 Cup Raisins
1 Teaspoon Cinnamon
1/2 Cup CSR White Sugar
CSR Caster Sugar

Method

  1. Rub the butter into the flour, and add the egg yolk and CSR White Sugar. Knead well.
  2. Add the lemon juice and rind.
  3. When well blended, chill for several hours, covered in the refrigerator.
  4. Roll out so that half fits an oblong, well greased cake tin. Line the tin with half the dough and sprinkle with breadcrumbs, if available.
  5. Fill with the sliced apples, raisins, cinnamon and CSR White Sugar.
  6. Cover with the remaining dough and brush the surface with slightly beaten egg white.
  7. Bake in a pre-heated 180C (350F) oven for about 35-40 mins. Dust with CSR Caster Sugar.

CSR Caster Sugar Caster Sugar

Ingredients: cane sugar

Caster sugar dissolves easily so it is ideal for meringues, puddings, jellies and cake mixes. When used in baking, the smaller sugar crystals caramelise evenly so it produces a fine golden colour in the finished product.
Being a superfine white sugar it can be used as a dry topping, often sprinkled over fruits or baked goods as a light dusting finish.
