Apple Cake
Ingredients
DOUGH: 2 Cups Plain Flour 1 Cup Butter 2 Tablespoons CSR White Sugar Juice and Rind of 1 Small Lemon 2 Eggs Yolks 1 Egg White
FILLING: 4 Large Granny Smith Apples, thinly sliced 1/4 Cup Raisins 1 Teaspoon Cinnamon 1/2 Cup CSR White Sugar CSR Caster Sugar
Method
- Rub the butter into the flour, and add the egg yolk and CSR White Sugar. Knead well.
- Add the lemon juice and rind.
- When well blended, chill for several hours, covered in the refrigerator.
- Roll out so that half fits an oblong, well greased cake tin. Line the tin with half the dough and sprinkle with breadcrumbs, if available.
- Fill with the sliced apples, raisins, cinnamon and CSR White Sugar.
- Cover with the remaining dough and brush the surface with slightly beaten egg white.
- Bake in a pre-heated 180C (350F) oven for about 35-40 mins. Dust with CSR Caster Sugar.

Tip : This dish can be served hot or warm with cream
