Apple & Apricot Cake with Coconut Topping

Ingredients

1 cup dried apricots, chopped
1/2 cup boiling water
1/2 cup oil
2 teaspoons vanilla essence
2 eggs
1 cup CSR White Sugar
1 1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
2 apples, peeled and grated

TOPPING
1 cup coconut, coarsly shredded
1/4 cup CSR White Sugar
1 egg

Method

Preheat the oven to 180ÂșC. Grease or oil spray a 22cm ring tin.

Place the apricots in a bowl and cover with the boiling water. Microwave for 1 minute. Cool completely. Beat the oil, vanilla, sugar and eggs in a bowl. Add the flour, baking powder and soda to this mixture and beat well.

Add apples and cooled apricot mixture. Mix well. Pour into the prepared cake tin.

Bake for 40 minutes.

Topping:
Mix the coconut, sugar and egg. Spread over the baked cake and return to the oven for a further 10 minutes or until golden brown.
