Apple And Walnut Fruit Cake

Ingredients

125g Butter
185g CSR White Sugar
2 Eggs
1 Teaspoons Powdered Coffee
1/2 Cup Apple Cider
315g Plain Flour
1 Teaspoon Bicarbonate Soda
1/4 Teaspoon Each Cinnamon, Cloves and Nutmeg
1 Teaspoon Salt
3/4 Cup Apple Puree
315g Mixed Dried Fruits
185g Sultanas
125g Chopped Walnuts
Walnut Halves for Decoration

Method

  1. Cream butter and CSR White Sugar together until fluffy. Gradually beat in eggs.
  2. Dissolve coffee in cider and beat into mixture.
  3. Mix dry ingredients together and fold into mixture, alternating with apple puree.
  4. Fold in mixed fruit, sultanas and chopped walnuts
  5. Pour mixture into two greased and paper-lined 16 x 11 x 8cm rectangular cake tins. If desired decorate with walnut halves.
  6. Bake in oven preheated to 160oC for 1 1/2 to 2 hours. Cool on wire racks.

Comments

Tip : This cake is best eaten after 24 hours.
