Apple And Walnut Fruit Cake
Ingredients
125g Butter
185g CSR White Sugar
2 Eggs
1 Teaspoons Powdered Coffee
1/2 Cup Apple Cider
315g Plain Flour
1 Teaspoon Bicarbonate Soda
1/4 Teaspoon Each Cinnamon, Cloves and Nutmeg
1 Teaspoon Salt
3/4 Cup Apple Puree
315g Mixed Dried Fruits
185g Sultanas
125g Chopped Walnuts
Walnut Halves for Decoration
Method
- Cream butter and CSR White Sugar together until fluffy. Gradually beat in
eggs.
- Dissolve coffee in cider and beat into mixture.
- Mix dry ingredients together and fold into mixture, alternating with apple
puree.
- Fold in mixed fruit, sultanas and chopped walnuts
- Pour mixture into two greased and paper-lined 16 x 11 x 8cm rectangular cake
tins. If desired decorate with walnut halves.
- Bake in oven preheated to 160oC for 1 1/2 to 2 hours. Cool on wire racks.
