Hazelnut Biscuits
Ingredients
155g Plain Flour
Pinch of Bicarbonate Soda
125g Unsalted Butter
60g Roasted Hazelnuts
60g CSR Caster Sugar
1 Egg Yolk
Mixed Berry Jam
CSR Soft Icing Mixture
Method
- Sift flour and soda together. Rub butter into flour until it forms crumbs.
- Add hazelnuts, CSR Caster Sugar and egg yolk, mixing to form a soft dough.
Allow it to rest in the refrigerator for one hour.
- Roll out on a floured board to about 5mm thick. Cut into rounds using a
fluted cutter about 3.5cm in diameter.
- Transfer carefully with a spatula to a floured baking sheet. Bake in an oven
preheated to 180oC for about 20 mins or until just browning.
- When cool sandwich together with the jam. Sprinkle with CSR Soft Icing Mixture.

Tip : For a delicious touch coat the surface with a little melted and cooled dark chocolate.
