Cider Stew

Ingredients

Serves: 6

1kg Blade, Round or Chuck Steak, cut in 2.5cm cubes
2 Tablespoons Plain Flour
1 Teaspoon Salt
Freshly ground Black Pepper to taste
1 Teaspoon Fresh or 1/4 Teaspoon Dried Thyme Leave
3 Tablespoons Vegetable Oil
2 Cups Apple Cider
1/2 Cup Water
1 Tablespoon Vinegar
1 Tablespoon CSR Raw Sugar
3 Apples, peeled, cored and quartered
2 Carrots, peeled and quartered
2 Onions, sliced
1 Leek, thinly sliced

Method

1 : Coat meat with mixture of flour, salt, pepper and thyme.
2 : In large heavy based saucepan or casserole, brown meat in hot oil.
3 : Stir in apple cider, water vinegar and CSR Raw Sugar; cook, stirring until mixture comes to boil. Reduce heat and simmer, covered for 1 1/2 to 2 hours or until meat is tender.
4 : Add apples, carrots, onions and leek. Cook 30 mins more or until vegetables are tender.

This natural granulated sugar (golden in colour, and honey like in taste) is mainly used as a sweetener for coffee, or in baking and cooking where it improves the flavour and colour of the end result. It is especially used in recipes for biscuits and cakes made with less processed ingredients like oatmeal and wholemeal flours.
