Chicken With Walnuts

Ingredients

Serves: 4

500g Chicken Fillets
2 Tablespoons Oil
1 Cup Walnuts, roughly chopped
1 Cup sliced Onions
1 1/2 Cups sliced Celery (diagonally)
1 1/2 Cups Chicken Stock
1/4 Cup Soy Sauce, or less
2 Tablespoons Sherry
2/3 Cup Bamboo Shoots, drained
1 Cup Water Chestnuts, drained and sliced thinly
1 Cup Small Mushrooms, sliced thinly
1 Tablespoon CSR White Sugar
1 Heaped Teaspoon Cornflour

Method

1 : Cut the chicken fillets in narrow strips and cook gently in hot oil until tender. Remove chicken and keep warm.
2 : Toast the walnuts in the oven until crisp.
3 : Stir the onion in the remaining oil for a few minutes, then add the celery. Cook only for a few minutes.
4 : Add half the stock and cook uncovered for about 5 mins.
5 : Combine the CSR White Sugar, cornflour, soy sauce, sherry and remaining stock and pour over the vegetables in the pan. Cook and stir until the sauce thickens.
6 : Add the chicken, mushrooms, bamboo shoots, water chestnuts and walnuts and heat through, but do not cook.

Tip : This dish should be served immediately with rice.
