Caramelised Roasted Vegetables

Ingredients

Serves: 4-5 as an accompaniment
Preparation Time: 10 minutes
Cooking Time: 50 minutes

2 large (about 300g parsnips)
3 (about 370g) carrots
2 (about 560g) desiree potatoes, washed
60mls (1/4 cup) olive oil
80 mls (1/3 cup) CSR Golden Syrup Squeeze
5 small (about 140g) brown onions, peeled, halved
3 (about 300g) zucchini, halved lengthways
1 garlic clove, finely chopped
1/2 tsp salt
1/2 tsp ground black pepper

Method

1 : Preheat oven to 200oC.
2 : Peel the parsnips and carrots and cut lengthways into quarters. Cut the unpeeled potatoes into large chunks.
3 : Combiine the olive oil and CSR Golden Syrup Squeeze in a large flameproof baking dish. Add the parsnips, carrots, potatoes, onions and zucchini and stir to coat the vegetables in the golden syrup mixture. Sprinkle with the garlic, salt and pepper.
4 : Bake in the top half of preheated oven, stirring twice during cooking, for 40-45 minutes or until the vegetables are tender. Remove from oven and place the baking dish over medium-high heat and cook, stirring constantly for 4-5 minutes or until the vegetables have caramelised. Serve immediately.

Tip :This dish is nicely accompanied by barbecued or roasted lamb, beef or chicken if desired.
