Beef Casserole With Pickles Walnuts
Ingredients
Serves: 3
500g Skirt Steak
2 Large Onions
1 Clove Garlic
2 Tablespoons Plain Flour
6-8 Pickled Walnuts
1 Tablespoon Tomato Paste
1 Bay Leaf
1 Tablesoon Salt
1 Teaspoon CSR White Sugar
1 Teaspoon Worcestershire Sauce
1 1/2 Cups Beef Stock
1 Small Glass Sherry
Method
1 : Cut steak in 2cm squares, roll in flour and brown in butter. Remove browned meat and put in a casserole dish with the onions, crushed garlic, tomato paste, CSR White Sugar bay leaf and stock, seasoning well. Cover and cook slowly for 1 1/4 hours.
2 : Add the pickled walnuts, chopped roughly and the sherry and cook another 1/2 hour until meat is tender. Serve with rice.
