Apple And Hazelnut Stuffing
Ingredients
2 Large Brown Onions
5cm Piece Fresh Ginger, peeled and grated
60g Butter
250g Fresh White Breadcrumbs
125g Toasted and Chopped Hazelnuts
1 Large Apple, peeled, cored and chopped
Juice 1 Lemon
Grated Rind of 1/2 Lemon
1 Teaspoon CSR Raw Sugar
2 Eggs, lightly beaten
Salt and Freshly Ground Black Pepper to taste
2 Tablespoons Chopped Parsley
1 Tablespoon Fresh Oregano, or 1 Teaspoon Dried
Method
1 : Cook onion and ginger gently in butter until tender but not browned. Pour into a bowl and mix in breadcrumbs, hazelnuts, apple, lemon juice, rind and CSR Raw Sugar. Bind together with beaten eggs and season with salt, pepper, parsley and oregano.
