Apple And Almond Salad
Ingredients
1 Mignonette Lettuce, washed and leaves separated
2 Raw Beetroot, peeled and shredded
2 Tablespoons Lemon Juice
2 Teaspoons CSR White Sugar
1/2 Cup Sour Cream
1 teaspoon Horseradish
Salt and Freshly Ground Black Pepper to taste
905 Slivered Almonds, toasted
Finely Shredded Rind of Half Lemon
Method
1 : Line a serving platter with the lettuce leaves.
2 : In a bowl mix together beetroot, apples, lemon juice and CSR White Sugar. Beat together sour cream, horseradish,
salt and pepper and pour over beetroot mixture. Add almonds and lemon rind and toss all lightly together until well
coated.
3 : Mound into the centre of the platter and garnish with extra lemon rind if desired.
