Pumpkin and Pecan Loaf

Ingredients

3/4 Cup CSR Brown Sugar
2 Eggs
1/2 Cup Vegetable Oil
1 Cup Pecan Nuts, roughly chopped
500g Pumpkin, peeled, steamed and mashed
1 1/2 Cups Plain Flour
1 Teaspoon Baking Powder
1 Teaspoon Bicarbonate of Soda
1 Teaspoon Ground Cinnamon
1/2 Teaspoon Ground Allspice

Method

1 : Place CSR Brown Sugar, eggs and vegetable oil in a bowl and whisk on high speed for 10 mins.
2 : Stir in chopped pecans and mashed pumpkin then fold in sifted dry ingredients.
3 : Pour into a greased and paper lined 12cm x 23cm loaf pan and bake at 160oC for 1/4 hours.
Remove loaf from pan and allow to cool before serving sliced with butter or margarine.
