Nutty Banana Loaf with Cream Cheese Frosting
Ingredients
125g butter
1 cup CSR white sugar
1 egg
3 or 4 mashed bananas
2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup chopped walnuts or hazelnuts*
Cream Cheese Frosting:
50g butter, softened
75g cream cheese
1 cup CSR icing sugar
1/4 cup chopped walnuts
Method
Cream together butter and sugar until light and fluffy. Thoroughly mix in the egg and mashed bananas. Add flour, baking powder, baking soda, salt and chopped nuts, but do not over-mix. Line base of a large loaf tin or 21cm cake tin with baking paper, pour in mixture, and bake at 180°C for 50 minutes. After cooling, turn out onto wire rack.
To make the frosting, mix together butter and cream cheese until creamy. Beat in icing sugar. Spread on top of cake and sprinkle with walnuts.
* If using hazelnuts, toast at 180°C for 5 to 10 minutes until golden brown. Rub skins off using paper towel and set aside.
