Date Loaf
Ingredients
1 cup dates {chopped}
3 tablespoons melted butter
1 teaspoon baking powder
4 weetbix{crushed}
1 cup CSR White Sugar
1 egg {beaten}
1 cup self raising flour
1 cup boiling water
Method
Put all ingredients in bowl except egg, flour and boiling water. Add the boiling water, mix and stand for 5 minutes.
Add beaten egg and flour.
Mix well and pour into greased loaf tin.
Bake for 40-45 minutes at 180°C; Leave in tin for about 10 minutes before turning out onto cooling rack.
Serve sliced with or without butter.
Comments
For a change replace the dates with sultanas.
Freezes very well and will keep for days in an airtight container.
