Beigly (Poppyseed Roll)

Ingredients

FILLING:
125g CSR White Sugar
1-2 Cups Water
500g Poppyseed
2 Tablespoons Jam
2 Egg Whites
1 Cup Sultanas
PASTRY:
250g Self Raising Flour
125g Butter
3 Egg Yolks
2 Teaspoons CSR Caster Sugar
Pinch of Salt

Method

1 : Dissolve the CSR White Sugar and the water in a large saucepan and add the poppyseed, sultanas, jam and
egg whites and mix together. Stand and let cool.
2 : Rub the flour, butter and salt together until the flour absorbs the butter.
3 : Add the beaten yolks and CSR Caster Sugar. Blend together until it is a good pastry consistency, adding a drop
4 : Roll out flat. Add the poppyseed filling then roll up as a Swiss roll.
5 : Brush with a little egg white if available. Place in a moderate oven for 1/2-3/4 hour or until cooked.
