Avocado Bread

Ingredients

2 cups Flour
3/4 cup CSR White Sugar
1/2 teaspoon each of Baking Soda and Baking Powder
Pinch of Salt
1 Egg, slightly beaten
1/2 cup mashed ripe Avocado
1/2 cup sour Milk or Buttermilk
1 cup chopped Pecans

Method

1 : Sift the first 4 ingredients into a bowl.
2 : In a separate bowl stir the egg into the avocado and gradually add the sour milk and pecans. Combine the avocado
mixture and the flour mixture, mixing gently only until all the flour is moistened.
3 : Pour the batter into a greased loaf tin and bake the bread in a moderate over 350oF (180oC) or until tests done.

Comments

Tip : Avocado bread is delicious sliced thin and spread with cream cheese or ricotta.
