Apricot Loaf

Ingredients

1 Cup of milk
1 Cup of all bran
1 Cup of CSR Soft Brown Sugar
125g or 4oz of dried apricots
1 Tablespoon of honey
1 Cup of self-raising flour

Method

Combine milk, all bran, brown sugar, chopped apricots, and honey in a bowl and cover, stand overnight in fridge.
Next day add sifted flour and mix well.
Grease an 8x4 tin and sprinkle with flour(this works well), spoon the mixture evenly into the tin bake moderate oven 150-160 degrees C for 1 hour.

Comments

I use two small tins and divide the mixture,
when they are cool wrap in tin foil and freeze they keep well.
Wrap cakes and muffins etc in tin foil to freeze - stops them getting freezer burn and also stops them drying out.
Healthy option, as no butter, no oil, no fats.
