Apple Sauce Raisin Loaf
Ingredients
1 egg
250 ml of apple sauce or pureed stewed apple
3/4 cup of CSR Dark Cane Sugar
50g butter melted
2 1/4 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 cup raisins (or sultanas)
1/2 cup walnuts or pecans – chopped
Method
Preheat oven to 180°C
Line a 23 x 13 cm loaf tin with baking paper and grease well.
Mix egg and apple sauce, add dark cane sugar and melted butter, add the dry ingredients, raisins, and nuts. Mix well and pour into prepared tin. Bake approximately 1 hour until a skewer comes out clean and the sides of the loaf are slightly shrunken from the side of the tin.
Cool in the tin for 10 minutes then turn out onto a wire rack and cool completely. Slice thinly; the loaf can be buttered if desired.
