Jam And Cream Cheese Pancakes

Ingredients

185g Plain Flour
2 Eggs
450ml Milk
60g melted Butter
250g Cream Cheese
Finely grated rind and juice of One Orange
2 Tablespoons chopped Walnuts
Butter for cooking pancakes
Jam
CSR Soft Icing Mixture

Method

1 : Sift flour into a bowl. Beat eggs, milk and melted butter together and add gradually to flour, beating all the time.
(This may be done in a food processor). Beat until smooth and slightly bubbly batter forms. Set aside in a cool place
to stand for at least one hour.
2 : Meanwhile beat cream cheese with orange rind and juice until light and smooth. Fold in walnuts. Set aside.
3 : For each pancake, heat a heavy based pan, greased with butter and pour in just enough batter, swirling pan, to allow
batter to cover entire base. Cook over medium heat until bottom has browned and top is beginning to bubble (shake
pan from time to time). Turn pancake over and cook other side.
4 : Stack pancakes on plate as they are cooked. Spread each pancake with layer of jam and then spread a little of the
cream cheese mixture across the centre of each. Roll up and place in oven proof dish.
5 : Brush surface with a little melted butter and place in oven to warm through before serving.
Sprinkle with CSR Soft Icing Mixture just before serving.

Tip :Apricot and Cinnamon Jam tastes delicious on these pancakes!
