Fruit muffins - never fail!
Ingredients
1 3/4 cups flour
3/4 cup CSR White Sugar
1 teaspoon baking soda
2 teaspoons spice to suit whatever fruit is used eg cinnamon, mixed spice
2 eggs
125g melted butter
1 cup fruit-apple banana pear berries
1 cup sultanas or chocolate chips
Method
Mix all ingredients together in order as listed until just combined. Don't overmix.
Put into muffin paper cases lining muffin tins or weel-greased or oil sprayed muffin tins.
Bake at 180°C for 15-20 minutes.

This is a great recipe to use whatever fruit you have.You can add a topping of cinnamon and brown sugar if desired.
These muffins are super quick and easy.
