Chocolate Chip Pikelets
Ingredients
1 cup milk
1 teaspoon DYC vinegar(optional)
2 cups self raising flour
6 tablespoons CSR White Sugar
2 eggs
2 tablespoons melted butter
1/2 cup chocolate chips
Method
Mix milk & vinegar in a cup. Set aside to sour.(If you don't use vinegar, just put milk in a cup).
Sift flour, Chocolate Chips & sugar in a bowl. Add eggs to sour milk(or just milk). Whisk it.
Add to flour. Whisk well until smooth-no lumps. Add melted butter. Stir in.
Rub frying pan with a little butter. Heat on medium.
Drop tablespoonful lots into frying pan.
When bubbles show, flip over and cook other side.

This recipe just tastes nicer with vinegar in it, although it seems a little strange - try it out!
